I was introduced to the mystic nice girls by founding member Cindy Mo, who I met at my church in Groton. I was excited to meet new people. At my first potluck I remember being so impressed with the ladies and the interesting things they were talking about. There were authors, cooks, travelers, kayakers, singers, realtors, and a lot of others which is why I love to listen to them talk as I’m a bit shy. Some women are still working and others have retired. I always feel welcome and am happier when I leave than when I arrived. We’ve taken day trips to theater, seen movies, went kayaking, met for happy hour, and watched our nice girl perform on stage too!
For the past few years I’ve been keeping track of whose hosting which month. At the beginning of the year i send out an email with all the months of the year and ask for volunteers to host. Each month i send out the date and location of that month’s potluck. When no one volunteers we’ve had the meeting at the bowling alley or at a local restaurant.
I work a lot and although i like to bake, i just don’t have the time so I usually pick something up.
Recipe:
Chicken Salad Potato Rolls
1 large can of canned chicken
3 tablespoons light mayonnaise
1 package party potato rolls
mix chicken and mayonnaise, refrigerate, split rolls in half, then add chicken salad. Super easy to prepare.
