Following my husband’s
transfer to Mystic, Connecticut, from Virginia,
I fell in love with the beauty of the land located between New York and
Boston, and more importantly, the abundance of water spots—ponds, lakes, rivers
and ocean—all in which to kayak.
But best of all, I loved
the start of the Nice Girls that transformed the lives of ordinary gals and
brought joy to all who participated. To make friends, my mantra was to
“just say yes” to new people and opportunities.
As the Mystic Nice Girls
Club grew, I developed friendships because of the structure and vision of those
who came together over the years.
Regular monthly potlucks surrounded by spontaneous varied activities
kept it exciting and brought in new friends to share.
Like me, fellow founding
member Jules later had to transfer to another area. She said to me, “Mystic was
a magical time.” That was due in part to
the Nice Girls Club.
White
Wine Chicken Chili

1 Tbsp olive oil
1 1/2 c chopped onion
3 cloves garlic finely chopped
2 tsp dried oregano
1 1/2 tsp ground cumin
1/2 tsp powdered ginger
1 1/2 c chicken broth
1/2 cup dry white wine
1 bay leaf broken in half
2 cups cooked chicken shredded
2 cups cooked, drained white beans
1 1/2 c grated Monterey Jack Cheese
Ingredients for 4 servings. Put all ingredients in crock pot on low for 6 hrs. Garnishes: diced tomatoes, chopped scallions, sliced black olives.
Enjoy!

Mystic really was magical when you, Jules, and Ann were all still here. We're still making new friends and creating memories but YOU were the cheerleader, school bus, organizer, encourager, and helper to everyone. You are the essence of a true Nice Girl!
