Mixed Fruit Cobbler

Batter:
1 stick of unsalted butter
1 cup flour
2/3 cup sugar
2 tsp. baking powder
¼ tsp. salt
2/3 cup milk, room temp.
1 egg, room temp
Filling:
1 (28 oz.) can pears, drained & diced
2 cups frozen mango chunks OR raspberries, slightly thawed
¾ cup sugar
¼ tsp. cinnamon
Juice of ½ lemon
1.      Place 9x13” in oven with stick of butter.
2.     Set oven to 350 degrees & keep an eye on the butter as it melts.  Remove from oven.
3.     Mix together flour, ¾ cups sugar, baking powder & salt.
4.     Slightly beat egg and add milk.
5.     Mix milk and egg mixture into dry mixture & pour evenly over melted butter in pan.
6.     Combined fruit, ¾ cup sugar, cinnamon and lemon juice & pour evenly over batter.
DO NOT STIR.
7.     Bake for 35 minutes or until batter comes to the top and is golden brown.
8.     Serve warm with whipped cream or ice cream.
10 minutes prep.
45 minutes total.
12 servings
Option: Use all fresh or canned peaches.
